Coconut White Beans + Poached Egg/Coconut Chili Crunch


2 eggs

2 big handfuls escarole, arugula, baby kale

2 cups white bean stew 

4 tbsp coconut chili crunch

6 grilled baby asparagus spears

4 grilled baby spring onions

Follow this white bean recipe, and top with a poached egg! Warm the beans gently in a saucepan, stirring often. 

Making the perfect poached egg: bring water to a boil in a small saucepan. Add a splash of vinegar. Stir circularly with a wooden spoon until a small whirlpool forms. Crack an egg and drop the egg in the whirlpool. Continue to stir circularly with a wooden spoon. When the white has set, remove with a slotted spoon. Let drain in the spoon, and then place onto your dish.
